Spring has sprung and finally begun. There’s nothing like getting outside after a long cold winter to get back gardening again. In this post, I’ll share with you the 5 vegetables to plant in spring, and they will be ready to harvest within 30-60 days.

Spring Vegetables #1: Peas

Peas are one of the tastiest spring vegetables to plant this year. The sweet heavenly taste of peas is nothing you’ll ever taste if you bought it. It only takes 60 days from seed to get beautiful pods, plus not to mention, it can planted as soon as the ground can be worked. WOW!
Peas will not grow well in hot weather. You’ll need to catch that cool weather for you to get a good crop. Peas should be planted early in the spring so they can start producing food for you while the weather is cool. Peas can survive some frost, but you don’t want to plant it too early or else it could die from the hard frost.
Plant your peas 4-6 weeks before the last frost date. From my experience with growing peas, I’ll say closer to 4 weeks, is the best time as peas grow really fast when the weather is cool.
Spring Vegetables #2: Radishes

Radish is one of the most versatile vegetables to plant in spring. The leaves and root can eaten. You can eat the root raw and steam the leaves or even use both in a salad. With under 30 days to grow, radish in my book is a plant you must grow. Radish can grow in spring or fall.
If it’s planted in the summer, the heat may cause your radishes to bolt. You’ll still want to plant radishes in the sunshine though. You can start radishes 4-6 weeks before the last frost date. Since it’s a root vegetable, after planting them, it’s not best to disturb their roots. Radishes, like carrots or any other root vegetable, like soft and loose soil to grow
Spring Vegetables #3: Lettuces

What’s a salad without lettuce? It just won’t be that tasty. Lettuce is a cool weather crop. Planting it in the summer may lead to the plant bolting. This crop is perfect for beginner gardeners. Some lettuce like the grand rapids lettuce will be roughly ready to harvest in 45 days, while others like the romaine lettuce can take around 70 days.
Around 2-3 weeks, you can start harvesting your baby lettuce leaves for salads. Lettuce can be grown in small containers for those living in tiny spaces or in raised beds. It should also be planted in loose soil and should have 4-6 hours of sunlight.
I usually start lettuce before I plant them into the ground, but you can direct sow it as well. Lettuce may tolerate a little frost, so you can plant it in the ground 1-3 weeks before the last frost date. Lettuce, for sure, is a spring vegetable to plant this year.
Spring Vegetables #4: Kale

From salads, to juices, to pesto, and kale chips, kale is one of the most useful crops out there. Personally, kale is one of my most favourite spring vegetable plants to grow, as kale can tolerate hard frost, and have many benefits. It is one of the healthiest spring vegetables to plant this year.
It comes in many colours, from bright green to purple. Kale is great for ornamental uses and to eat. You can plant kale 4-6 weeks before that last frost date and it will grow through the summer. One time I left my kale in -10 degrees celsius and the next day it was still alive! Outstanding, right? The best part is when you pick the leaves off the plant, more will grow. It just keeps on growing and growing. Amazing!
You can harvest kale anytime in the growing season, around 1 month – 1 1/2 months after planting it. Kale can grow to be a large plant so it may be not the best to grow in small spaces, but if you keep picking the leaves, then you can grow it!
Spring Vegetables #5: Bok Choy

Bok Choy – Last but not the least, is my all-time favourite, BOK CHOY! We use bok choy in stir-fry, and soups. It is popular in Asian dishes. They grow fast and taste delicious. Like lettuce or radish, bok choy must be planted in the spring as it will bolt as soon as the weather is hot.
Bok choy is in the cabbage family. This spring vegetable will grow fast, so sow your seeds 1 week before your last frost date. Bok choy sprouts rather quickly, so you should plant them when all the danger of frost has passed. Boy choy enjoys full sun. It can grow in containers or in the ground. Bok choy is a must plant for those who have tiny spaces.
