Once you see little stems pushing up through the soil, add some more of your soil and compost mix into the bag, making sure to not cover the leaves. As the plant keeps growing, keep adding your soil/compost mixture into the bag and unfold the sides the bag slowly until you filled the bag 1/2 – 3/4 depending on the size of the bag. I recommend to stop adding soil once you filled the bag 1/2 way up, otherwise it would be using it’s energy to grow taller raher than to grow larger tubers.
Harvesting Potatoes From Bags
You can harvest your first set of potatoes as early as you can see a few sets of flowers. Those potatoes that you see are called new potatoes, but if you want large potatoes and big yield than you should let the plant to continue to grow and be patience.
For large mature potatoes that you can store, wait until all the leaves and foliage die. Then tip over the bag on a tarp and push out the soil and look for potatoes. You can also harvest your potatoes by grabbing hold of the plant by its stem, pulling gently upward. Pull the plant out of the soil. There may be a few potatoes on the plant. Take them and place them in a container. Dig your hands in the soil and hunt down the remaining potatoes.
